Soy Flour Oatmeal Chocolate Chip Cookies

Ingredients:

  • 1 cup butter
  • 1 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 2/3 cup soy flour
  • 2 cups flour , sifted (could try some other gluten-free )
  • 2 tsp cinnamon (optional)
  • 1 3/4 cups oatmeal
  • 1 1/2 tsp baking soda
  • 1 tsp salt

Directions:

  1. In a large bowl, combine the butter and the sugars and cream them well together.
  2. Add the eggs and the vanilla and continue to mix well.
  3. In a separate bowl, mix the flours together and add the baking soda, salt and the cinnamon to the flour. Stir the flour well.
  4. Add the flour the creamed mixture and mix well. Add the oatmeal and the chocolate chips to the dough.
  5. Drop onto a cookie sheet. These will rise to be a good size cookie.
  6. Bake at 375°F for about 10-12 minutes.
  7. Transfer onto a cooling rack and enjoy warm!
