Simple Vanilla Muffins

Ingredients:

  • 1 egg
  • 1 cup milk
  • 1/3 cup oil
  • 1 tbsp vanilla (decrease if adding fruit)
  • 1 tbsp baking powder , scant
  • 1/2 tsp salt
  • 1/3 cup sugar
  • 2 cups flour

Directions:

  1. Preheat oven to 400.
  2. Beat egg.
  3. Add oil, vanilla and milk, mix.
  4. Mix dry ingredients together, add to the wet mix.
  5. Grease muffin tin, fill cups 3/4 full.
  6. Bake 12-15 minutes, or until golden brown.
