  3. Combine 1 1/2 pounds peeled raw shrimp, 1/2 teaspoon sugar, 1 tablespoon soy sauce, 1 sliced garlic clove, and 1 teaspoon each salt and sesame oil. Chop 1 pound bok choy, separating stems from leaves. Heat some peanut oil and cook the shrimp mixture for about 2 minutes; remove. Add 1 tablespoon minced ginger, 1/2 cup cashews, and the bok choy stems. Cook until brown. Add the greens and 1 cup water or sake. Cook until most of the liquid evaporates. Return the shrimp to the pan and add 1/4 cup minced scallions, 1 teaspoon sugar, and 1 tablespoon soy sauce. Cook 1 minute and serve.
