Shirley Corriher's Chocolate Chip Cookies, Puffy Version

Ingredients:

  • 1 1/2 cups cake flour
  • 3/4 tsp salt
  • 1 1/2 tsp baking powder
  • 9 tbsp shortening
  • 1 cup light brown sugar , minus 1 tbsp
  • 1 large egg
  • 1 tbsp vanilla

Directions:

  1. Preheat oven to 375°F.
  2. Sift flour, salt and baking powder together. Set aside.
  3. Beat shortening and sugar together until fluffy.
  4. Add egg and beat thoroughly.
  5. Beat in vanilla.
  6. Gradually add dry ingredients and beat on low speed until thoroughly combined.
  7. Stir in chips.
  8. Drop onto lightly greased cookie sheets and bake for about 12 minutes, or until edges begin to brown.
