Ingredients:

  • 1/2 cup uncooked rice
  • 1 pint of milk
  • 1/2 tsp salt
  • 1 envelope knox gelatin
  • 1/4 cup cold water
  • 1/3 cup sugar
  • 1/4 tsp almond flavor

Directions:

  1. Cook rice and milk in pot on stove until creamy, then add salt
  2. Dissolve gelatin in cold water, then add to hot rice.
  3. Cool mixture until it begins to set
  4. Whip the whipping cream with the sugar and almond flavoring, then add to cooked rice
  5. Cook junket according to package directions and add raspberries.
  6. Cool and spread on top of rice mixture
