This has been a family favorite for years especially at thanksgiving and christmas, its probably more of a dessert but we often eat it like a side dish AND save room for dessert. It tastes good and looks pretty too Ingredients:
1/2 cup uncooked rice |
1 pint of milk |
1/2 tsp salt |
1 envelope knox gelatin |
1/4 cup cold water |
1 pint whipping cream |
1/3 cup sugar |
1/4 tsp almond flavor |
10 oz frozen raspberries |
1 box raspberry junket |
Directions:
1. Cook rice and milk in pot on stove until creamy, then add salt 2. Dissolve gelatin in cold water, then add to hot rice. 3. Cool mixture until it begins to set 4. Whip the whipping cream with the sugar and almond flavoring, then add to cooked rice 5. Cook junket according to package directions and add raspberries. 6. Cool and spread on top of rice mixture |
