Red Lentil And Sweet Potato Soup

Ingredients:

Directions:

  1. Heat oil in sauce pan over medium heat
  2. Cook onion until soft
  3. Add remaining ingredients and increase heat to high and bring to a boil
  4. Reduce heat to low and cover and simmer 20 minutes, stirring occasionaly, until sweet potato is soft
  5. Transfer to a blender and blend , in batches if necessary, until smooth
  6. Heat before serving
  7. Optional:sprinkle a little nutmeg and ,or, add a dollop of sourcream
