Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Lightly grease a 13x9-inch baking dish.
  3. In large skillet, melt butter over medium heat.
  4. Add shallots, pancetta and parsley; cook 5-6 minutes, stirring frequently, or until pancetta is crispy.
  5. Stir in flour, and cook 2 minutes, stirring constantly.
  6. Add milk, and cook 6-8 minutes, stirring frequently, or until thickened.
  7. Stir in 2 cups mozzarella and the Swiss cheese.
  8. Add hot cooked pasta, tossing to coat.
  9. Spoon mixture into prepared baking dish.
  10. Sprinkle with remaining mozzrella cheese.
  11. Bake 25 minutes, or until cheese is lightly browned.
