Ingredients:

Directions:

  1. In a large bowl, dissolve yeast in warm water. Proof until frothy.
  2. Stir in sucanat, milk, egg, salt, and enough flour to make a soft dough.
  3. Knead 6-8 minutes, or until smooth, on a lightly floured surface.
  4. Add flour as needed to decrease sticky texture.
  5. Place dough in a well oiled bowl, cover with a damp cloth, and set aside to rise. Let it rise until the dough has doubled in volume.
  6. Punch down dough, and knead in garlic.
  7. Pinch off small amounts of dough to make 12-14 pieces. Roll into balls, and allow to rise again, covered in the bowl.
  8. While the dough is rising, warm olive oil in a large skillet to medium high.
  9. Once dough has risen and oil has warmed, take dough balls and spread into thin circles.
  10. Grill on both sides until golden brown.
  11. Each piece of bread will rise slightly while frying. Be careful not to burn the bread, but allow it enough time to become slightly crispy on the outside and soft in the middle.
  12. Serve immediately, and refrigerate leftovers.
  13. Still good days later, with a little butter or on the side of a curry dish.
