One Bowl Chocolate Cupcakes

Ingredients:

  • 1 2/3 cups flour
  • 1 1/2 cups sugar
  • 1/2 cup cocoa
  • 1/2 cup shortening
  • 1 cup hot water
  • 1/2 tsp salt
  • 2 eggs
  • 1 tsp vanilla

Directions:

  1. Place all ingredients in a large bowl.
  2. Mix at low speed until all ingredients are moistened.
  3. Scrape down bowl.
  4. Mix at high speed for 3 minutes.
  5. Fill baking cups 2/3 full.
  6. Bake at 350F for 20-25 minutes.
