Ingredients:

  • 3 eggs
  • 3 cups milk
  • 1 cup flour
  • 3 tbsp sugar
  • 1/2 tsp salt
  • 1/2 tsp vanilla (optional)

Directions:

  1. You can use a blender, or beat the liquid ingredients together. Add sugar then slowly add flour. Mixture should be smooth. Heat a non-stick skillet (large electric skillet is best) over medium heat until very HOT. Lightly oil the skillet and pour the batter into it. spread the batter into the pan to expand to a thin layer. Cook until bubbles form and the pancake is golden brown on the bottom, about 1-1/2 minutes. Cut into manageable squares. Flip turn and continue to cook for about one more minute. Remove from the frying pan. When finished, fold each pancake into quarters. Can be topped with a number of toppings:.
  2. Traditional dollop of fruit and sprinkle with powdered sugar.
  3. Peanut Butter.
  4. Whipped cream.
  5. Powdered sugar.
  6. Syrup.
