Ingredients:

  • 1/3 cup oil
  • 1/2 cup sugar
  • 1/2 cup brown sugar , packed
  • 1 egg
  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp nutmeg
  • 1/2 tsp salt (optional)
  • 1/2 cup milk
  • 6 -8 tbsp melted butter
  • 1/2 cup sugar
  • 1 tsp cinnamon

Directions:

  1. Cream oil and sugars.
  2. Add egg and beat well.
  3. Mix and sift flour, baking powder, salt, and nutmeg in separate bowl.
  4. Add alternately with milk to egg mixture.
  5. Fill greased muffin tins 2/3 full.
  6. Bake in 350 degree oven for 20-30 minutes or until done.
  7. While muffins are baking, combine 1/2 cup sugar and cinnamon.
  8. Remove muffins from pans immediately and roll in melted butter, then in sugar cinnamon mixture.
