Ingredients:

Directions:

  1. Bring water to boil add butter and salt. Add rice bring back to boil. Cover and simmer for about 25 min. Let cool when done.
  2. Combine the sour cream, cream, cilantro, 1/4 cup onion and salt.
  3. Heat butter or oil, saute onion, garlic and peppers until wilted.
  4. Add to rice.
  5. Add corn and sour cream mixture.
  6. Stir in cheese.
  7. Put in casserole dish and bake in preheated 350 degree oven for 25-30 min.
