Mediterranean Shrimp Stew

Ingredients:

Directions:

  1. Start by heating a little olive oil in a medium hot pan.
  2. Season the shrimp with salt and pepper to taste.
  3. When the oil starts to shimmer, carefully add the shrimp and toss them around as they start to cook and change color. (You might have to do this in batches.)
  4. After a couple of minutes, when the shrimp are mostly cooked through, remove them from the pan.
  5. Add the bottled clam juice to the pan and let it cook down for a few minutes.
  6. After it's reduced a bit, add the combination of white beans, sliced roasted red peppers and artichoke hearts to the pan and let that mixture start to simmer.
  7. Then add the shrimp back to the pan and let those finish cooking through.
  8. Season it with a little salt to taste and a few red pepper flakes if you like and it’s ready to serve!
  9. HINTS:
  10. Substitute chicken broth for the clam juice if you like!
  11. Add a little chopped fresh basil or basil pesto for added flavor.
  12. Serve with some crusty bread on the side.
