Ingredients:

  • 1 cup sugar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/4 tsp nutmeg
  • 1 tsp salt
  • 1 cup cold water
  • 80 ml mayo
  • 1/2 tsp vanilla
  • olive oil to grease muffin pan

Directions:

  1. Preheat oven 400F and grease muffin pan.In a mixing bowl, sift together dry ingredients : flour, sugar, baking powder, baking soda, salt, coffee mix, nutmeg. Add remaining ingredients, mixing until moistened. Spoon into greased muffin pan, filling each cup about half full.Bake at 400F for 15-20 minutes. See Photo
  2. Makes 12 muffins.
