Maple- Nut-Raisin Muffins

Ingredients:

  • 2 tbsp brown sugar
  • 1 tsp soft butter or 1 tsp margarine
  • 1/2 cup raisins
  • 1/4 cup brown sugar
  • 2/3 cup milk
  • 1 tsp maple extract
  • 1 egg

Directions:

  1. Heat oven to 400°F.
  2. Grease bottoms of 12 muffin cups with spray or shortening or you can use paper baking cups.
  3. In a small bowl mix the topping ingredients and set aside.
  4. In a large bowl stir the muffin ingredients until just moistened.
  5. Spoon evenly in muffin pans
  6. Sprinke with topping.
  7. Bake 15-18 minute or until golden brown.
  8. Cool slightly and remove from pan to cooling rack.
  9. Serve warm.
