Low Calorie Tofu Oatmeal Chocolate Chip Cookies

Ingredients:

  • 1 1/4 cups light margarine
  • 30 (1/3 g) packets stevia truvia
  • 2 tbsp molasses
  • 1 large egg
  • 2 tsp vanilla
  • 1 1/2 cups flour
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3 cups rolled oats

Directions:

  1. Pre-heat oven: 350 degrees F.
  2. Cream margarine with molassas and Truvia until light and fluffy.
  3. Beat in egg and vanilla.
  4. Stir flour with baking soda, salt, nutmeg, cinnamon and add to creamed mixture - mix well.
  5. Add pureed tofu to mixture - mix well.
  6. Fold in oats, chips and nuts.
  7. Place rounded tablespoonfuls onto ungreased cookie sheets.
  8. Bake at 350 degrees for 9-10 minutes for soft and 11-12 minutes for firmer crisper cookies.
  9. Best if transferred to cooling rack.
