Ingredients:

  • 1/2 cup confectioner's sugar
  • 1 3/4 cups all purpose flour
  • 1/4 tsp salt
  • filling
  • 4 eggs
  • 1 1/2 cup sugar
  • 1/2 tsp baking powder
  • 1/3 cup lemon juice
  • confectioner's sugar

Directions:

  1. In a mixing bowl, cream butter and confectioner's sugar. Add lime peel; mix well.
  2. Combine flour and salt; gradually add to creamed mixture. Press into a greased 13x9x2 baking pan. Bake at 350º for 13-15 mins or just til edges are lightly browned.
  3. Meanwhile, in mixing bowl, beat eggs and sugar. Combine the flour ad baking powder. Add to egg mixture with lemon juice and peel; beat until frothy.
  4. Pour over hot crust. Bake for 20-25 mins or til light golden brown. Cool on wire rack. Dust with confectioner's sugar. Cut into squares. Store in the fridge.
