I found this recipe in Country Magazine, submitted by a lady named Holly Wilkins from Lake Elmore, VT. All I can say is WOW! Thank you Holly! I made these with the full intention of sharing, but when my family tried them-it was LOVE! Read more ! They refused to let me share any at work! They lasted ONE DAY with my family of THREE. They're absolutely INCREDIBLE!!!! Worth the time it takes to grate the peels and all. Delicious! Ingredients:
1 cup butter, softened |
1/2 cup confectioner's sugar |
2 tsp grated lime peel |
1 3/4 cups all purpose flour |
1/4 tsp salt |

4 eggs |
1 1/2 cup sugar |
1/4 cup all purpose flour |
1/2 tsp baking powder |
1/3 cup lemon juice |
2 tsp grated lemon peel |
confectioner's sugar |
Directions:
1. In a mixing bowl, cream butter and confectioner's sugar. Add lime peel; mix well. 2. Combine flour and salt; gradually add to creamed mixture. Press into a greased 13x9x2 baking pan. Bake at 350ยบ for 13-15 mins or just til edges are lightly browned. 3. Meanwhile, in mixing bowl, beat eggs and sugar. Combine the flour ad baking powder. Add to egg mixture with lemon juice and peel; beat until frothy. 4. Pour over hot crust. Bake for 20-25 mins or til light golden brown. Cool on wire rack. Dust with confectioner's sugar. Cut into squares. Store in the fridge. |
