Indian Potato Sweet

Ingredients:

  • 250 g potatoes
  • 500 g sugar
  • 1/2 cup water
  • 2 tbsp butter or 2 tbsp ghee

Directions:

  1. Boil, peel and mash potatoes.
  2. Boil sugar in water till syrup is of thread-like consistency (when a drop of it is taken between thumb and index finger and pulled apart, it forms a thread).
  3. Remove from stove.
  4. Add potatoes and butter.
  5. When it begins to firm, add cashew nuts, sultanas and vanilla essence.
  6. Stir till mixture leaves the sides of the pan.
  7. Take a tray and apply ghee on for to come off properly.
  8. Spread on a shallow tray.
  9. Make it cool and cut into pieces and serve.
