Frozen Chocolate, Peanut Butter and Banana Loaf

Ingredients:

Directions:

  1. Coat an 8.5X 4.5 inch loaf pan with cooking spray and line with waxed paper, leaving overhang on both long sides.
  2. Place an inch of water in a medium saucepan and begin to boil.
  3. Place chocolate in a heatproof bowl, set on top of the saucepan.
  4. Heat, stirring occasionally until there are no lumps in the chocolate.
  5. Cool to room temperature.
  6. Place bananas in blender or food processor, blend until smooth.
  7. Stir peanut butter into cooled chocolate and fold in the whipped cream.
  8. Pour into prepare loaf pan, top with chopped peanuts.
  9. Fold waxed paper over the top, freeze until firm, at least 3 hours.
  10. To serve, run a hot towel along sides of pan.
  11. Slice about 1/2 inch thick.
  12. Freeze up to 1 month.
