Frozen Chocolate Mousse

Ingredients:

  • 1 (6 oz) package chocolate chips
  • 2 tbsp rum or 2 tbsp brandy
  • 1/4 cup sugar

Directions:

  1. In a blender, combine chocolate chips and very hot coffee.
  2. Blend until melted and smooth.
  3. Add rum or brandy.
  4. Add egg yolks and blend 30 seconds.
  5. Beat whites to soft peaks. Gradually add sugar, beating into stiff peaks.
  6. Fold into chocolate mixture.
  7. Whip cream and fold into chocolate mixture.
  8. Pour in prepared dishes or paper baking cups set in muffin tins. Freeze until firm.
