Ingredients:

  • 4 medium. size green tomatoes
  • 1/2 cup unsifted all-purpose flour
  • 11/2 tsp. salt
  • 2 eggs
  • 1 tsp. sugar

Directions:

  1. Trim a top and bottom of each tomato. Cut tomatoes crosswise into 1/2 thick slices . On large sheet of wax paper, combine flour with 1/2 tsp. salt. In small bowl beat eggs with sugar and rest of salt.Dip tomato slices into flour mixture coating completely. Dip into egg mixture, then into bread crumbs, coating completely. Heat oil in pan fry slices about 3 minutes per side or until golden brown. Add oil as needed. Makes about 6 servings.
