Ellen's Spicy Gingerbread Men

Ingredients:

  • 1/2 cup margarine
  • 1/2 cup sugar
  • 1/2 cup molasses
  • 2 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 tsp clove
  • 1 tsp ginger
  • 1/2 tsp nutmeg

Directions:

  1. In a large bowl, cream margarine and sugar til smooth.
  2. Stir in, molasses and egg yolk.
  3. Combine flour, salt, baking powder, baking soda, cinnamon, cloves, ginger, and nutmeg; blend into the molasses mix.
  4. Til smooth.
  5. Cover and chill for at least 1 hour.
  6. Preheat oven to 350%.
  7. On lightly floured surface, roll the dough to 1/4 thickness.
  8. Cut into desired shapes.
  9. Place 2 inches apart on ungreased cookie sheets.
  10. Bake for 8- 10 minutes.
  11. Remove and cool.
  12. Frost and decorate.
  13. At Easter, for an added surprise, I like to dip them in melted chocolate and then decorate.
