Ingredients:

Directions:

  1. Preheat oven to 325 Degrees F.
  2. Spray a 13 x 9 inch pan with PAM or other cooking spray.
  3. In a medium saucepan over a low heat melt butter and stir in cookie crumbs until combined.
  4. With your fingers press the mixture evenly into the bottom of the pan. Bake on the middle rack for 15 minutes or until it appears dry.
  5. Remove from oven and set aside.
  6. Using an electric mixer, beat together cream cheese and sugar til smooth.
  7. Beat in eggs and then stir in peanut butter until creamy.
  8. With a rubber spatula spread the peanut butter mixture evenly over the baked crust.
  9. Bake on a middle oven rack for 10-15 minutes until set.
  10. Allow pan to cool on a wire rack to room temperature.
  11. Bring the cream to a boil then remove from heat and add the chopped chocolate.
  12. Using a wire whisk, beat until smooth.
  13. With a rubber spatula, spread your chocolate mixture over the peanut butter mixture evenly.
  14. Refrigerate until firm.
  15. Using a large and sharp knife, cut into bars wiping the knife clean with a damp paper towel each time you slice.
  16. These can be stored in an airtight container in the refrigerator for 3 days or frozen up to 1 month.
  17. Note: The number of squares depends on the size they are cut.
