Chocolate Walnut Bread Pudding

Ingredients:

  • 6 cups cubed stale italian bread
  • 4 cups milk
  • 3 tbsp unslated butter
  • 3/4 cup packed light brown sugar
  • 1/8 tsp salt
  • 4 eggs
  • 2 tsp vanilla
  • 1/8 tsp salt
  • 2 tsp cornstarch , dissolved in 1 tbsp cold water
  • 1/4 tsp vanilla

Directions:

  1. Heat oven to 350 degrees; grease shallow 2 quart baking dish with butter.
  2. Add bread, walnuts to dish.
  3. Combine 2 cups milk, butter, sugar, salt in saucepan; bring to simmer; stir to melt butter; remove from heat.
  4. Add chocolates; let stand 5 minutes; whisk until smooth.
  5. Whisk eggs, vanilla and remaining milk in bowl.
  6. Whisk into chocolate mixture; pour over bread.
  7. Bake in 350 degree oven for 35 to 40 minutes or until set in center.
  8. For the sauce...
  9. Bring cream, sugar and salt in saucepan to a simmer.
  10. Stir in cornstarch; simmer, stirring, until thickened, about 1 minute.
  11. Remove from heat.
  12. Stir in white chocolate and vanilla until smooth.
  13. Serve over warm or room temp pudding.
