Ingredients:

Directions:

  1. Let cheeses come to room temperature.
  2. In a large mixer bowl beat together cream cheese and sour cream until smooth.
  3. Add in swiss and cheddar, onion, pimento (undrained) pickle relish, half the bacon, half the pecans, salt and pepper.
  4. Cover and chill until firm.
  5. Shape into one large or two small balls on waxed paper.
  6. In a small bowl combine remaining bacon, pecans, parsley and poppy seed.
  7. Turn out on wax paper.
  8. Roll cheese ball in seed mixture to coat.
  9. Wrap and chill.
  10. Let stand 30 minutes at room temperature before serving.
