Buttercup (Butternut) Yeast Bread

Ingredients:

  • 3 (1/4 oz) packages active dry yeast
  • 1/2 cup warm water
  • 2 tbsp sugar
  • 2 cups milk
  • 2/3 cup packed brown sugar
  • 2 eggs , slighlty beaten
  • 3 tsp salt

Directions:

  1. In a very large mixing bowl, dissolve yeast in warm water. Add sugar, let stand for 5 minutes.
  2. Add the squash, milk, brown sugar, butter, eggs and salt; mix well.
  3. Add six cups flour. Beat on medium speed for 3 minutes.
  4. Stir in enough remaining flour to form a soft dough.
  5. Turn onto a floured surface; knead until smooth and elastic, about 10 minutes.
  6. Place in a greased bowl, turning once to coat top. Cover and let rise in a warm place until doubled, about 1 1/4 hours.
  7. Punch dough down. Divide into three portions; shape into loaves.
  8. Place in three greased 9 x5 loaf pans. Cover and let rise until doubled, about 45 minutes.
  9. Bake at 350 degrees for 35-40 minutes or until golden brown.
  10. Cool for about 10 minutes before removing from pans to wire racks.
