Ingredients:

  • 1 small eggplant
  • 1/6 cup egg beater

Directions:

  1. Cut eggplant quite thin. Salt eggplant, leave 30 mins then rinse. Dig in egg, roll in eggplant. Bake in oven, 350 for 10 mins. Put in dish cover in sauce, bake 30 mins
