Bob Hope's Lemon Meringue Pie

Ingredients:

  • 1 1/2 cups tbsps sugar
  • 3 tbsp sugar
  • 4 tbsp cornstarch
  • 1 tsp cornstarch
  • 3/4 cup water
  • 3 tbsp butter
  • 4 eggs
  • 1 pinch salt
  • 1 1/2 tsp lemon peel, minced (rehydrate in 2 tbsp water)
  • 1/4 tsp salt
  • 2 1/2 tbsp sugar

Directions:

  1. Start with a nicely cooked pie crust.
  2. Preheat oven to 350.
  3. Mix sugar, cornstarch and water over medium low heat stirring constantly until thick.
  4. Stir in the butter until melted.
  5. Remove from stove and whisk in the egg yolks, one at a time. Then the lemon juice, salt and lemon peel.
  6. Reheat gently on low for 2-3 minutes while stirring. Do NOT boil.
  7. Pour into pie shell and cool.
  8. Meringue - start with a VERY clean, dry glass bowl and beat the egg whites, salt and cream of tartar to stiff peak on high.
  9. Fold in the sugar and vanilla by hand, carefully.
  10. Spread over the pie to the edge.
  11. Bake 15 minutes until the meringue is lightly browned.
  12. Cool to room temp, then refrigerate until time to serve.
