Baked Cranberry Sauce

Ingredients:

  1. Preheat oven to 350 degrees F.
  2. Pick over the cranberries and place in a baking dish a little larger than the volume of berries (I use a 8 or 9 inch square glass dish).
  3. Like a cookie sheet with foil and place the baking dish on it (in case it overflows in the oven).
  4. Sprinkle the brown sugar over the berries.
  5. Place the cookie sheet and baking dish in the oven. Bake for 1 to 1 1/2 hours, stirring every 15 minutes.
  6. You want to cook long enough to soften the berries and have the juices boiling. Once the berries are soft, mash them well during the stirring every 15 minutes. This ensures that the cranberry sauce will set up once cooled.
  7. Remove from the oven, let cool slightly in the baking dish, then transfer to a storage dish and refrigerate.
