Apricot Nectar Cookies

Ingredients:

  • 2 3/4 cups of flour
  • 1 teasp. baking powder
  • 3/4 cup white sugar
  • 1/4 cup dark brown sugar - packed
  • 1 large egg
  • 1/2 cup apricot preserves, (the better the preserves the better the flavor of the cookie)

Directions:

  1. In medium bowl: mix the flour and baking powder
  2. In a large mixer bowl: blend sugars on medium speed.
  3. Add butter. mix to form a grainy paste
  4. Add egg, apricot nectar, and the preserves.
  5. Mix on medium speed until smooth
  6. Add flour mixture and the dried apricots
  7. Mix on low speed just until blended. Don't over mix
  8. Drop by rounded Tablespoon onto a lightly greased cookie sheet
  9. 1 1/2 inches apart
  10. Bake at 300'F for 22 -24 mins. or until the cookies just start to brown on the bottom edges
  11. Let cookies cool on the cookie sheet for 5 mins.
  12. Then transfer them to a cool flat surface like a counter top.
