Applesauce Muffins

Ingredients:

  • 1 1/3 cup flour
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 cup skim milk
  • 1/4 cup oil
  • 1 egg
  • 1/2 cup applesauce

Directions:

  1. Preheat oven to 400*F
  2. Measure flour into sifter. Sift and remeasure
  3. Sift together the flour, sugar, baking powder, cream of tartar, salt and cinnamon into a large mixing bowl
  4. Make a well (an open spot) in the center of the dry ingredients using a wooden spoon
  5. In a small bowl, beat the egg
  6. In a small mixing bowl, combine the milk, oil, egg and applesauce
  7. Pour liquid ingredients in the well and stir carefully until the dry ingredients are moistened but still lumpy
  8. Line muffin pan with paper cups
  9. Using a large spoon, put batter into muffin cups (about 1/2 full)
  10. Bake for 12-15 minutes
  11. IF DESIRED: Melt 2-3 tbsp of butter in the microwave, 30 seconds at a time and stir, set aside
  12. Mix 1/2 tsp cinnamon and 1/3 c sugar in a small bowl and set aside
  13. When muffins are done baking, remove them from the oven and let cool for a few minutes
  14. Take them out of the muffin pan and dip the tops in the melted butter, then the sugar/cinnamon mixture and serve!
