  1. Put potatoes into a large pot, cover with water and add 1 teaspoons salt. Bring to a boil. Reduce heat and simmer until tender, about 15 minutes.
  2. Meanwhile, brown ground round, onion and garlic. Drain grease from pan and add to the potato mixture. Add tomatoes, okra and corn mixture to the pot. Add carrots, if using. Cook over medium heat, about 30 minutes, stirring frequently. Taste and add more salt and pepper, if needed.
  3. Serve with cornbread.
