Ingredients:

Directions:

  1. Preheat oven to 350.
  2. Grease a 9x13 inch metal baking pan,line with parchment paper, set aside.
  3. In bowl, whisk butter, sugar& eggs.
  4. Stir in cookie crumbs& coconut.
  5. Press into the bottom of the prepared pan.
  6. Bake in the centre of oven until firm about 20 mins.
  7. Let cool completely in pan on rack.
  8. For Filling: In bowl, stir together butter, milk& peppermint extract.
  9. Beat in icing sugar& custard powder until smooth.
  10. Beat in food colouring to desired shade.
  11. Spread evenly over crust, refrigerate until firm, about 45 minutes.
  12. For Topping: In heatproof bowl over saucepan of hot (not boiling) water, melt chocolate with butter, spread over filling.
  13. Sprinkle with chopped chocolate covered peppermint sticks.
