Sun-Dried Tomato Pesto

Ingredients:

  • 1/2 cup water
  • 1/3 cup olive oil
  • 1/3 cup pine nuts
  • 1/4 tsp thyme
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup hot water

Directions:

  1. Soak tomatoes in warm water for 15 minutes.
  2. Squeese tomatoes dry.
  3. Place in blender with next 5 ingredients.
  4. Blend for 1 minute.
  5. Transfer to bowl.
  6. Add garlic, cheese and water.
  7. Toss with pasta.
