Stovetop Rice Pudding

Ingredients:

  • 1 tsp cinnamon
  • 1-1/2 cup cooked rice
  • 1 egg
  • 1-1/2 cup milk
  • 1/4 tsp nutmeg
  • 1 dash(es) salt
  • 1/3 cup sugar
  • 1 dash(es) vanilla extract

Directions:

  1. To prepare cooked rice, first bring 1-1/2 cups of water to a boil. Add 3/4 cup rice, reduce heat and simmer under cover for 20 minutes.
  2. Combine the cooked rice, milk, sugar and eggs in a saucepan. Cook over medium heat for 15 minutes, stirring frequently. Add the beaten egg, vanilla extract, cinnamon and nutmeg and stir continuously for two more minutes.
  3. Remove from heat and serve.
