SPINACH and WATERCRESS SALAD

Ingredients:

Directions:

  1. Wash spinach and watercress and remove tough stems and discard.
  2. Add spinach and watercress to a bowl and add 2 trays of ice cubes.
  3. Place in refrigerator to chill for about 1/2 hour.
  4. When chilled, discard ice cubes, drain.
  5. Tear spinach into smaller bite size pieces.
  6. Add spinach and watercress to a large bowl.
  7. Finely grate zest from one orange.
  8. Remove skins from both oranges and discard.
  9. Slice oranges thinly across the grain and cut in half.
  10. Remove and discard any seeds.
  11. In a mixing bowl, whisk together olive oil, raspberry vinegar, Dijon mustard, sugar, salt and black pepper until incorporated.
  12. Pour dressing mixture over spinach and watercress; toss well to coat.
