Ingredients:

Directions:

  1. Wash and dry shrimp and roll them in flour.
  2. Heat oil in a large skillet.
  3. Brown shrimp on both sides in hot oil.
  4. Remove oil from skillet and set aside.
  5. Add wine to shrimp and cook until wine is reduced to half.
  6. Put reserved oil into a small saucepan, add tomato paste, water, salt, pepper and cayenne and cook for 3 to 4 minutes.
  7. Pour sauce over shrimp and add the parsley, scallion and truffle to the skillet.
  8. Cook for 4 minutes.
  9. Remove from pan and add lemon juice.
  10. Serve with rice or pasta.
