SEARED PORK WITH LEMON-THYME SAUCE

Directions:

  1. Olive oil spray
  2. -oz. boneless pork chops, pounded thin
  3. Black pepper
  4. 1/2 cup low-sodium chicken or vegetable broth
  5. Tbsp. lemon juice
  6. Tsp. chopped fresh thyme
  7. Garlic clove, minced
  8. Heat a skillet over medium-high heat and lightly spray with olive oil.
  9. Season the pork with pepper. Place in the skillet and sear for 2 minutes on each side. Transfer to a plate.
  10. Add broth, lemon juice, thyme and garlic to the skillet and place over medium heat. Simmer until sauce reduces slightly, 2 to 3 minutes. Add pork to the sauce; cook until meat is cooked through, 3 minutes.
