garlic, peeled, fresh green serrano chili, rinsed, stemmed, and seeded, sweet onion (8 oz.), peeled and coarsely chopped, english cucumber (12 oz.), rinsed and diced (1/8 in .), salt, firm-ripe tomatoes, tamarind concentrate, chopped fresh cilantro, chopped fresh mint leaves, grated fresh ginger, ground cumin, nonfat plain yogurt, salad oil, cumin seeds, yellow and black or brown mustard seeds, nigella seeds (optional)

red onion, finely chopped, cucumbers (200g), ripe tomatoes, finely cubed (100g), cilantro, chopped, red chile, very finely chopped (omit or reduce amount to suit your taste), green chili, very finely chopped (omit or reduce amount to suit your taste), lemon juice, oil (i use sunflower), black pepper, freshly ground, chat masala, salted peanuts, roughly chopped (see introduction), salt (to taste)
