Rustic Scallops (Emeril Lagasse)

Ingredients:

  • 2 tbsp rustic rub
  • 2 tbsp olive oil
  • 1/2 cup guacamole
  • sour cream in a squeeze bottle
  • 1 tbsp brunoise red peppers
  • 1 tbsp brunoise yellow peppers
  • 8 tbsp paprika
  • 3 tbsp cayenne
  • 3 tbsp onion powder
  • 6 tbsp salt
  • 2 1/2 tbsp dried oregano
  • 2 1/2 tbsp dried thyme
  • combine all ingredients and store in an air-tight container.

Directions:

  1. Season the scallops with Rustic Rub. Heat the oil in a large saute pan. When the oil is hot, sear the scallops for 2 minutes on each side. Remove from the pan.
