Roast Sweet Potato Fries

Ingredients:

  • 1 1/2 lbs sweet potatoes , 2-3 medium
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Directions:

  1. Preheat oven to 425. Scrub sweet potatoes; pat dry.
  2. Halve lengthwise; quarter each half lengthwise.
  3. On a large rimmed baking sheet, toss sweet potatoes with remaining ingredients until coated.
  4. Arrange cut sides down in a single layer in pan.
  5. Roast, turning potatoes halfway through, until tender and browned 30 to 40 minutes.
