1 1/2 lbs sweet potatoes, 2-3 medium |
1 teaspoon cumin |
1 teaspoon coarse salt |
1/2 teaspoon black pepper |
1 tablespoon olive oil |
Directions:
1. Preheat oven to 425. Scrub sweet potatoes; pat dry. 2. Halve lengthwise; quarter each half lengthwise. 3. On a large rimmed baking sheet, toss sweet potatoes with remaining ingredients until coated. 4. Arrange cut sides down in a single layer in pan. 5. Roast, turning potatoes halfway through, until tender and browned 30 to 40 minutes. |
