Pepper Jack Artichoke Dip

Ingredients:

  • 2 14 oz cans quartered artichoke hears, drained and chopped
  • 1 cup dukes real mayo
  • 8 oz melba toat (about 64)

Directions:

  1. Preheat oven to 4o0
  2. In medium bowl mix artichokes, mayo and 2 c cheese
  3. Spread into ungreased 13x9 ungreased baking dish
  4. Ina small bowl, mix remaining 1/2 c cheese and the bread crumbs; sprinkle over artichoke mixture
  5. Bake 10-12 minutes or until thoroughly heated
  6. Garnish with chopped red bell papper and parlsey
  7. Serve with melba toast
