Ingredients:

Directions:

  1. Cook onion in oil until soft: add sausage and garlic and cook, stirring until sausage is brown and crumbly. Discard excess fat. Stir in tomato paste, tomatoes, wine, water, salt, oregano, basil, pepper and sugar. Simmer uncovered for about 1 1/2 hours.
  2. Cook lasagna noodles. Drain, rinse with cold water and drain again.
  3. Mix betaen eggs with ricotta; add 2 T chopped fresh parsley.
  4. Butter a 9x13 baking dish. Spread a thin layer or sauce over the bottom. Arrange 1/3 of the noodles in an even layer over the sauce. Spread 1/3 sauce over the noodles, dot with 1/3 of the ricotta mixture then 1/3 of mozzarella.
  5. Repeat layering 2 more times. Sprinkle Parmesan cheese over top.
  6. Bake covered at 350 for 30 ins. Remove cover an bake uncovered for 15 mins. or until hot and bubbly.
