Ingredients:

Directions:

  1. Cream butter and sugar on medium speed until light.
  2. Beat on lemon zest and salt.
  3. Stir in flour to make stiff dough.
  4. Stiff in anise seed.
  5. Wrap tightly in plastic wrap and chill for at least 1 hour.
  6. Preheat oven to 350°.
  7. Lightly grease or spray baking sheets on a lightly floured board or pastry cloth, roll out dough to slightly less then 1/8-inch thickness.
  8. Use a biscuit cutter to cut into 2-inch rounds.
  9. Sprinkle lightly with sugar.
  10. Bake in center of oven for about 10 minutes, or until pale golden.
  11. Remove immediately to wire racks.
