Ingredients:

  • 2/3 cup sugar
  • 1 egg
  • 1 cup flour
  • 1 tsp vanilla

Directions:

  1. Preheat oven to 400.
  2. Grease cookie sheet.
  3. Cream the butter and gradually add the sugar, beating until light and fluffy.
  4. Add the eggs and mix well.
  5. Stir in the coconut, flour, vanilla, and orange rind.
  6. Drop by teaspoonfuls on the cookie sheet and bake for 10-15 minutes, or until golden.
  7. Cool slightly before removing cookies from sheet.
