Goats Curd Cheesecake With Passionfruit Caramel Sa...

Ingredients:

Directions:

  1. BASE
  2. Grease a 20x30cm rectangular baking dish with cooking spray
  3. Line with baking paper or cling wrap
  4. Spray again with cooking spray
  5. Process the almonds (if using whole) with the sesame seeds until mixture resembles breadcrumbs
  6. If using almond meal, process sesame seeds and add almond meal
  7. Place butter into a pan and heat gently until it turns nut brown
  8. Quickly pour into food processor
  9. Pulse until mixture forms 'pebbles'
  10. Tip into greased tin and smooth out base and sides evenly.
  11. Chill in refrigerator for 30 minutes or until firm.
  12. CHEESE FILLING
  13. Place cream, curd, sugar, lemon juice and zest into a saucepan
  14. Heat over medium heat to blood temperature (approx 38°C)
  15. Soak gelatine leaves in cold water until soft (or follow directions for other forms of gelatine)
  16. Whisk gelatine into cream mixture until smooth
  17. Strain through a fine sieve into a jug
  18. Pour onto base and chill for 2 hours
  19. PASSIONFRUIT CARAMEL SAUCE
  20. Process passionfruit and strain, reserve the juice and 1/4 cup of seeds
  21. Add equal amount of water to the juice (1:1 ratio)
  22. Place sugar into a pan and simmer gently over low heat until sugar melts and turns golden
  23. Stir in passionfruit juice and water mixture
  24. Simmer until mixture reduces and becomes thick and smooth
  25. Stir through processed seeds and mix well
  26. TO SERVE
  27. Cut cheesecake into 8 slices (less if you are greedy!)
  28. Drizzle with passionfruit caramel sauce
  29. Add a glass of 'sticky' white
  30. Simply a blissful and impressive way to end any meal (or as a self indulgent snack at any time!)
