Ingredients:

Directions:

  1. In a small bowl, mix together the custard powder and 1/2 cup of the
  2. Milk; set aside.
  3. Sprinkle the sugar into a saucepan over medium heat.
  4. When the sugar begins to caramelize, add the remaining milk and coffee
  5. To the pan, and bring to a boil.
  6. At this stage, the caramel will become
  7. Very crusty.
  8. Reduce heat to low, and cook until the sugar dissolves,
  9. About 5 minutes.
  10. Stir in the custard powder mixture, and cook, stirring
  11. Until the custard thickens.
  12. Remove from heat, and whisk in the egg
  13. Yolk.
  14. In a clean glass or metal bowl, whip the egg white until soft peaks
  15. Form.
  16. Fold the egg white carefully into the custard mixture.
  17. Transfer
  18. To a serving dish and refrigerate until firm.
